I&#8217;ve been wanting a panini grill for a while now, but I just couldn&#8217;t bring myself to spend that much money on a (as Alton Brown says) &#8220;uni-tasker.&#8221;  So when I thought I saw a <a href="http://www.dontforgetdelicious.com/to/Cuisinart4-in-1" target="_self">Cuisinart 4-in-1 Griddler</a> on sale at Amazon for only $43.95, I immediately ordered it!  </p>

<p>It turns out, what I <strong>actually</strong> ordered was just the regular <a href="http://www.dontforgetdelicious.com/to/Cuisinart Griddler" target="_self">Cuisinart panini press</a>, NOT the 4-in-1 I <em>thought</em> I was ordering.  No WONDER it was such a great price!  Doggone it!</p>
<p>However I ended up with it, it is definitely easier to make panini with this, than trying to press a sandwich using a cast iron skillet and a grill pan.  We tried it out for the first time last night on these yummy <strong>Smoked Mozzarella and Chicken Panini</strong> sandwiches, and it worked like a charm.</p>
<p>This recipe is fairly quick and simple but packs in lots of flavor, and the sandwiches are large and filling.  This made two large panini sandwiches for us as a one-dish meal, but if you were serving sides, you could probably serve just one-half to 4 people and be fine.</p>
<p><strong>Don&#8217;t wimp out</strong> and sub regular mozzarella for the smoked &#8211; it&#8217;s what makes it so amazing!</p>

<h1>Smoked Mozarella &#038; Chicken Panini</h1>

<li>Cooking spray</li>
<li>1 boneless, skinless chicken breasts</li>
<li>Salt and Pepper</li>
<li>2 cloves garlic, chopped</li>
<li>1/2 teaspoon crushed red pepper flakes</li>
<li>1/2 small yellow onion, chopped</li>
<li>1 (14.5 oz) can Fire Roasted diced tomatoes (regular tomatoes will work, too)</li>
<li>1/2 cup fresh basil, chopped</li>
<li>1/4 cup Parmesan cheese, freshly grated</li>
<li>1/2 pound smoked mozzarella cheese</li>
<li>4 large slices of ciabatta bread (or other sturdy bread)</li>
</ul>

<h4><strong>Instructions</strong></h4>

<li>Heat grill or indoor grill pan to high.  Season chicken with salt and pepper and spray with cooking spray (or drizzle with olive oil).  Spray pan liberally with cooking spray.  Grill chicken 3-4 minutes per side and set aside.  </li>
<p></p>
<li>Heat a small to medium saucepan on medium heat.  Spray bottom with cooking spray.  Add garlic, red pepper flakes and onions and cook, stirring frequently, for 5-7 minutes until onions are softened.  Add tomatoes and heat through, about 2 minutes.  Add half of the basil and taste.  Season with salt and pepper if needed.   </li>

<li>Reduce heat a little and allow tomato mixture to reduce while you prepare sandwiches.</li>
<p></p>
<li>Lay 4 slices of ciabatta bread on your cutting board.  Lay slices of smoked mozzarella on 2 of the silces, and sprinkle parmesan cheese on the other two.  Lay one grilled chicken breast on each parmesan coated slide of bread.</li>
<p></p>
<li>Remove your sauce pan from the heat and strain tomato mixture through a strainer, discarding tomato juice.  If you don&#8217;t get rid of all that juice, your sandwiches will be even <strong>more</strong> messy!</li>
<p></p>
<li>Spread a large spoonful of tomato mixture over each chicken breast, sprinkle with remaining basil, then close up your sandwiches.</li>

<li>Spray outside of sandwich with butter flavored cooking spray, or brush with olive oil or melted butter.</li>
<p></p>
<li>Grill &#8216;em, baby!  Use your panini press or two pans or whatever your pressed sandwich method is, until the bread is pressed and crispy, and the cheese is melted.</li>

Consequently, comfort food is the dish of the day! The only way it could get more comfortable is if, firstly, someone else made it for you and, secondly, if it were delivered like when you order room service in <a href="http://www.britanniahotels.com/">Britannia hotel rooms</a>. It is simply yummy. A successful experiment!  This is a new one for us, but definitely fits the bill.  And the best part is that this is just like pizza &#8211; you can customize it to your heart&#8217;s content.  Put whatever add-ins into the potatoes you like &#8211; prosciutto and Parmesan like I did, or go for more garlic and some herbs. Or whatever else floats your boat. But whatever you do &#8211; add something!  Just potatoes would be too plain.<br />
&nbsp;<br />
Same goes for the toppings &#8211; add some chopped up pepperoni, or mushrooms or whatever toppings you like. Be sure to jazz up the tomatoes with herbs. Don&#8217;t delay &#8211; this one is a winner!<br />

<li>1 tablespoon Fresh oregano minced</li>
<li>Kosher salt and black pepper to taste</li>

<li>Preheat oven to 450. Coat the bottom of a 9&#8243; springform pan with cooking spray and set aside.</li>
<li>Place potatoes and garlic in a saucepan and cover with water. Bring to a boil and cook until fork tender, about 15 minutes. </li>
<li>Meanwhile, heat a nonstick pan over medium-high heat. Coat with cooking spray and saute prosciutto and fresh rosemary until prosciutto is browned, about 2-3 minutes. Set aside.</li>
<li>When potatoes are done, drain and return to pan over low heat. Stir briefly to allow excess moisture to evaporate. Remove from heat and add prosciutto / rosemary mixture. Add flour, oil and egg. Mash with potato masher until combined and smooth. Season to taste with salt and pepper.</li>
<li>Spread potato mixture in bottom of prepared pan. In a medium bowl, combine tomatoes and herbs. Spread evenly over potato mixture. combine cheeses and sprinkle over tomato mixture.</li>
<li>Bake for 25 minutes or until potatoes are golden and cheese is melted. Let stand 20 minutes.</li>
<li>Cut into wedges and serve. Garnish with fresh herbs.</li>

<p>Recently, I saw <a href="http://www.kitchenexperiments.net/2007/07/little-bites-of-joy-pan-fried-gnocchi.html">this post</a> with such a gorgeous photo of pan fried gnocchi that it made my mouth water.  Immediately, I knew I had to try it that way.</p>
<p>After much cogitating and surfing and considering what I had in my fridge and pantry, this was the result.  The gnocchi was delicious &#8211; crispy on the outside, soft on the inside. Slightly salty from the seasoning I put on it as it was cooking.  The sauce was also delicious &#8211; tangy and creamy.  If I were to do it again, I might actually separate the gnocchi from the rest of it and leave it sauceless &#8211; it was so good in its crispy state, and the sauce, though minimal, was somewhat distracting.</p>

Serves 2 (adapted from <a href="http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&#038;recipe_id=1011269">Cooking Light</a>)</p>
<p>10 ounces dried or fresh gnocchi (I used 8 ounces and it was barely enough. Unless you are a light eater, I would bump it up a touch).<br />
2 links chicken sausage, sliced into bite sized pieces<br />
1/2 cup sliced mushrooms.<br />
Cooking spray<br />
Salt and pepper to taste<br />
2 tbsp dry white wine<br />
1 1/2 cups low sodium chicken broth or stock<br />
4 sprigs fresh thyme leaves<br />
2 ounces soft goat cheese<br />
Fresh thyme leaves for garnish</p>
<p>Heat a large nonstick skillet over medium to medium-high heat.  Coat pan very liberally with cooking spray.  Add gnocchi and fry, stirring often and adding cooking spray as needed, until golden brown and crispy. During cooking process, <strong>lightly</strong> season with salt and pepper. To test doneness, take a bite of one.  If it tastes floury, keep cooking.  Set aside and keep warm.</p>
<p>Coat pan again with cooking spray.  Add sausage and cook, stirring often, until browned and cooked through. Set aside.  Spray pan again and saute mushrooms to desired doneness.  Set aside.</p>
<p>Add wine to pan and scrape up browned bits quickly (wine will reduce rapidly). When reduced by about half, add chicken broth and thyme leaves.  Boil gently until reduced to about 1/2 cup, about 5 minutes. Remove from heat, add cheese to pan and whisk until smooth.  Add sausage and mushrooms into sauce and toss to coat.  </p>
<p>Divide gnocchi between two bowls, top with sausage mixture and sprinkle with fresh thyme leaves. </p>
